There’s something comfy cozy about sipping a Pumpkin Pie Flavored drink near Thanksgiving. It may not be Thanksgiving quite yet in the United States (otherwise known as the biggest shopping season of the year), but here in Canada where I live Thanksgiving comes earlier (October 10th this year).
So if you love your pumpkin pie, but you don’t want to make it… try this out! And if you want to save a few calories but want full-bodied pumpkin pie flavor… this is definitely for you!
Pumpkin Spice Latte
1 to 2 tbsp solid, canned pumpkin (not pumpkin pie filling)
1 cup milk
1/4 tsp pumpkin pie spice (or 1/8 tsp cinnamon, dash nutmeg, dash ground cloves)
2 tbsp sugar free vanilla coffee syrup (or 2 tbsp sweetener or sugar, plus 1 tsp vanilla)
2 to 4 oz espresso (or left over coffee, or instant coffee mixed with just enough water to dissolve it)
*Optional: whipping cream & either cinnamon sugar or caramel sauce
- In a small saucepan heat milk, spices, pumpkin and sweetener. Whisk until frothy as it heats. (If you have an espresso machine, steam the mixture until 160 degrees.)
- Pour the mixture into a large mug.
- Pour in the coffee.
- Top with whipping cream and either cinnamon sugar or caramel sauce.
If you use decaf coffee, sweetener instead of sugar and skim milk you have a low fat, low sugar alternative to your favorite Thanksgiving dessert – and it won’t keep you up at night either!
