We’ve got a new favorite around here… and I made some of it for Father’s Day.
It’s easy.
It’s fresh.
It’s bursting with flavor.
I’m calling it Summer Tomato Feta Pecan Salad, and I hope you enjoy it as much as we do!

This salad was a perfect match to our steak and mushrooms Father's Day meal.
Summer Tomato Feta Pecan Salad
1 large garden cucumber (or 2 medium), sliced and then cut into chunks
2 fresh tomatoes, diced
1 cup cubed feta cheese
1/4 cup green onion sliced sliver fine
2/3 cup pecans, broken in large pieces
1/3 cup mayonnaise
salt and pepper to taste
- Combine all ingredients into a large cold bowl.
- Stir gently until everything is well mixed.
- Serve.
You may want to garnish this one with some green onion sliced lengthwise thinly. Enjoy!
